Spicy Roasted Herbed Nuts

Everyone needs a great neighbor/teacher gift idea for the holidays! Try this recipe for spiced nuts - hopefully some of the batch will make it out of your kitchen - they are delicious!


1 1/2 cups almonds (unroasted)
1 1/2 cups walnuts (unroasted)
1 cup hazelnuts (unroasted)
1 cup pecan halves (unroasted)
1/2 cup maple syrup
1/4 teaspoon cayenne pepper
1 1/2 teaspoons fresh oregano, chopped
1 1/2 teaspoons fresh thyme leaves, chopped
1 1/2 teaspoons fresh rosemary, chopped
1 1/2 teaspoons fresh savory, chopped
1 1/2 teaspoons fresh marjoram, chopped
3 Tablespoons walnut oil or olive oil
1 teaspoon kosher salt


  1. Mix nuts with herbs, syrup, and oil.

    Spread in a large sheet pan, and sprinkle with salt.

  2. Bake in a 300 degree F oven, stirring occasionally, until the liquid evaporates and nuts are golden under the skin, about 45 minutes to 1 hour.

  3. Let cool, taste, and add a little more salt if desired.

**Note - in lieu of the fresh herbs, use dried ones (1/2 teaspoon of each). Store cool nuts airtight up to 3 days at room temperature or one month in the freezer.
